I really enjoy going out for breakfast or brunch and eggs Benedict is one of my favourite orders, as I always believed that hollandaise would be an absolute nightmare to even attempt to make đ.
I finally got the courage to take a shot at it and after a couple of epic scrambled egg failures I came across a âfoolproofâ way so I gave it a chance and to be fair it really worked first time and was truly delicious.
That easy in fact I may never go out for eggs Benedict again (I lied) .
This recipe also gives a good method for poached eggs, although I prefer using two pans of water with a little vinegar and the vortex method , it never fails for me.
Of course if perfect poached eggs every time are what you want an egg poacher is a useful tool that I always used until I got my poaching method right.
Eggs Benedict is also an easy recipe to customise to what you want and since perfecting this recipe I have used smoked English back bacon, Spanish jamon and also black pudding rounds in place of Canadian bacon
Ive also added hot sauce to the hollandaise and topped with sliced red chillis for a spicy twist.
